Eastern Shore Pheasant

Family favorite around bird hunting season. Frying the pheasant pieces in oil ensures every bite is tender and succulent. Uses few ingredients, prep and cooking time are minimal for a delicious dish.

Eastern Shore Pheasant


1 Pheasant

½ cup flour

2-1/2 tbsp. of seafood seasoning

½ cup olive oil

1-1/2 tbsp. butter

1 sliced lemon


  1. Remove all meat from the pheasant, cut into 1-2 inch bite size pieces
  2. Mix flour and seafood seasoning
  3. Roll meat in seasoned flour to coat thoroughly
  4. Heat olive oil and butter in large cast iron or heavy skillet
  5. Cook meat until consistently browned and crispy
  6. Remove from skillet, drizzle lemon juice onto meat
  7. Serve with waffle cut fries and a Baltimore Martini
