Eastern Shore Pheasant Recipe – A Flavorful Tribute to Classic Coastal Cuisine

Ingredients
1 Pheasant
½ cup flour
2-1/2 tbsp. of seafood seasoning
½ cup olive oil
1-1/2 tbsp. butter
1 sliced lemon
Directions
- Remove all meat from the pheasant, cut into 1-2 inch bite size pieces
- Mix flour and seafood seasoning
- Roll meat in seasoned flour to coat thoroughly
- Heat olive oil and butter in large cast iron or heavy skillet
- Cook meat until consistently browned and crispy
- Remove from skillet, drizzle lemon juice onto meat
- Serve with waffle cut fries and a Baltimore Martini
